Prepare the Leeks

Trim the roots and dark green tops off the leeks. Slice them in half lengthwise and rinse under cold water to remove any dirt. Cut the leeks into thin half-moons.

Sauté the Leeks

In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Add the leeks and a pinch of salt. Sauté until they are soft and translucent, about 5-7 minutes.

Add Garlic and Wine

Mince the garlic and add it to the skillet, cooking for an additional minute until fragrant. Pour in the white wine and let it simmer for about 3-4 minutes until slightly reduced.

Cook the Scallops

In a separate pan, heat the remaining tablespoon of butter and olive oil over high heat. Season the scallops with salt and black pepper. Sear the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.

Combine and Serve

Once the scallops are cooked, place them on top of the sautéed leeks and pour any remaining sauce from the pan over them. Garnish with fresh thyme before serving.
