Select and harvest ripe Pinot Grigio grapes from the vineyard.

Harvesting

Crush the grapes to extract the juice. This can be done using a grape crusher or by hand.

Crushing

Press the crushed grapes to separate the juice from the skins and seeds.

Pressing

Add the wine yeast to the juice and allow it to ferment in a temperature-controlled environment for 2-3 weeks.

Fermentation

Once fermentation is complete, rack the wine into a clean fermentation vessel, leaving sediment behind.

Racking
