OLD FASHIONED

In a small saucepan, combine 0.5 cup water, 2 tablespoons sugar and 1 tablespoon dried thyme (or 4–5 fresh sprigs). Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Remove from heat and let steep, covered, 8–10 minutes to concentrate the thyme flavor. Strain out herbs and reserve the syrup.

Make thyme infusion

Brew 1.5 cups strong black tea (use double-strength: 1.5 cups water with 2 tea bags or 2 tablespoons loose leaf) and let cool slightly. Stir in 2–3 tablespoons of the thyme syrup to taste (reserve remaining syrup for sweetness adjustments). Chill tea briefly if you prefer a colder spritz base.

Brew tea

In a measuring jug combine 0.5 cup cranberry juice, 0.5 cup apple juice, 1 tablespoon fresh lemon juice and 2 tablespoons fresh orange juice. Taste and adjust balance: add up to 1 more tablespoon thyme syrup if you prefer sweeter or to round the tartness.

Fill two large wine glasses or spritz glasses halfway with ice cubes.

Divide the cooled tea mixture between the two glasses (about 1/2 cup each). Divide the fruit & citrus blend between the glasses (about 1/4 cup each) and gently stir once to combine.

Top each glass with 1/2 cup dry sparkling rosé (or sparkling water for NA). For an optional hybrid beer-forward variation, replace half the sparkling rosé with 1/4 cup citrus/ herbal IPA per glass or float 2–3 oz IPA on top for aroma. Pour slowly to preserve bubbles.

If using sage, lightly slap or bruise the sage leaf, rub briefly on the glass rim, and drop into the drink for a savory herb accent. Add a small pinch of sea salt across the surface of the drink (or stir the pinch into the fruit blend before topping) to enhance savory hop and fruit notes.

Garnish each glass with 1 fresh thyme sprig, 1 orange slice and 1 lemon wheel. Float 3 fresh cranberries in each glass for color if desired.

Serve immediately with a short stirring stick so the drinker can mix any separated components. Encourage sipping to enjoy the layered tea, herbal and sparkling notes.
