Base cocktail
Seasonal garnish & infusion (choose one set depending on season)
Optional finishing & table-side
Method
Base cocktail
- 1
- 2
Muddle seasonal fruit if using raw fruit
If using fresh seasonal fruit (strawberries, raspberries, or a small apple slice for autumn), place fruit in a mixing glass or shaker and gently muddle 4–6 times to release juice and oils. For herbs (basil/mint), clap the leaves between your hands to release aroma then add to the muddled fruit and press lightly once or twice.
- 3
Dry shake
Into a cocktail shaker add the base spirit (2 oz gin or neutral spirit), 0.75 oz seasonal liqueur or shrub, 0.75 oz fresh citrus juice, 0.5 oz simple or honey syrup, the muddled fruit/herb mixture (if used), 2 dashes bitters, and the egg white (if using). Seal the shaker and dry-shake vigorously (no ice) for 15–20 seconds to emulsify and create a silky texture.
- 4
Wet shake
Add a large handful of ice (or 4–6 cubes) to the shaker and shake again vigorously for 10–15 seconds until the shaker exterior becomes frosty and well chilled.
- 5
Strain and serve
Double-strain into a chilled coupe or rocks glass over fresh ice (cubed for spirit-forward, crushed for a more refreshing presentation). If you prefer a long drink, pour into a highball and top with 2 oz sparkling water.
Seasonal garnish & infusion
- 6
Spring garnish (strawberry & basil)
If you chose the spring option, finish the drink with a small basil leaf floated on top and a thin strawberry fan on the rim. Express a citrus twist over the surface and drop it into the drink.
- 7
Summer garnish (raspberry & mint)
For summer, thread 3 raspberries on a pick, slap a mint sprig to release aromatics and rest it on top of the glass. Express a citrus twist over the drink and discard or float as preferred.
- 8
Autumn garnish (apple & cinnamon)
For autumn, flame or torch a thin apple slice briefly to warm and aromatize, add the slice to the rim, and float a whole star anise. If using cinnamon syrup in the recipe, reduce simple syrup by 0.5 oz and use the cinnamon syrup amount specified.

Finishing aromatic touch
Always finish by expressing a citrus twist over the drink to release essential oils. If offering a smoked presentation, briefly flame a rosemary sprig or citrus peel and cup the smoke over the glass for a few seconds before serving.
Optional finishing & table-side
- 11
Low-ABV/Long pour variation
If a lower-ABV version is requested, build the cocktail in a highball over ice using the same proportions but reduce spirit to 1.25 oz and top with 2 oz sparkling water. Stir gently to combine and garnish as above.
- 12
Dehydrated garnish & service
For a refined look, add a dehydrated citrus wheel to the rim or surface. If offering a smoky table-side finish, ignite the rosemary or toast a citrus peel briefly and capture the smoke under a glass cloche or invert a second glass over the top for dramatic presentation; lift carefully at service.
