Prepare the bread
Lightly brush both sides of 4 slices of country-style or sourdough bread with 1 tablespoon olive oil. If you prefer richer flavor, spread 1 teaspoon butter on one side of each slice instead of or in addition to the oil.

Brighten and season ricotta
Place 1 cup whole-milk ricotta in a bowl. Add 1 tablespoon lemon zest, 1 teaspoon fresh lemon juice, 2 tablespoons honey, 1/2 teaspoon fine sea salt, and 1/4 teaspoon freshly ground black pepper. Stir until smooth and creamy. Taste and adjust seasoning — add more honey for sweetness or a pinch more salt if it tastes flat.

If the ricotta is very thick, thin with 1–2 teaspoons of milk or water until spreadable but not runny.

Spread ricotta on toast
Divide the ricotta mixture evenly among the 4 toasted bread slices, spreading it to the edges with a knife or small spatula.

Add olive oil and herbs
Drizzle about 1 teaspoon extra-virgin olive oil over the four toasts (roughly 1/4 teaspoon per slice). Scatter 2 tablespoons thinly sliced fresh herbs (mint or basil) over the ricotta.

Sprinkle flaky sea salt (about 1/4 teaspoon total) and a small crack of black pepper over the toasts. Add any optional toppings as desired — fresh berries or fig jam for a sweet version, halved cherry tomatoes and a pinch more salt for savory, or a sprinkle of toasted nuts for crunch. Serve immediately while the toast is warm.
