    Toast spices

    In a small dry skillet over medium heat, toast the allspice berries and black peppercorns for 1–2 minutes, shaking the pan, until fragrant. Remove from heat and crush lightly with the back of a spoon or a mortar and pestle.

    Macerate fruit

    Combine the pomegranate seeds, dried huckleberries, and granulated sugar in a medium bowl. Stir to coat fruit with sugar, then cover and let sit at room temperature for 30–45 minutes until the sugar pulls juice from the fruit and becomes syrupy.

    Simmer shrub base

    Pour the macerated fruit and any released juice into a small saucepan. Add water, crushed spices, ground cinnamon, and 2 thyme sprigs. Bring to a gentle simmer over medium-low heat and cook for 8–10 minutes, pressing fruit with the back of a spoon to release more flavor. Do not boil aggressively; you want a gentle reduction.

    Steep & strain

    Remove from heat and allow the mixture to cool slightly, then stir in the apple cider vinegar. Let the mixture steep, covered, at room temperature for at least 1 hour (or refrigerate and steep up to 12 hours for a rounder flavor). Strain through a fine-mesh sieve lined with cheesecloth or a fine chinois into a clean jar, pressing solids to extract liquids. Discard solids.

    Finish shrub

    Taste the shrub and adjust balance: if too sharp, add up to 1–2 tablespoons more sugar; if too sweet, add a splash more vinegar. Remove and discard the 2 thyme sprigs used for simmering. Cover and refrigerate the shrub — it will keep for 2–4 weeks.

Herb & Garnish Prep

    Lightly bruise the mint and basil leaves by clapping them between your palms or gently rolling them to release oils. Reserve three small sprigs of thyme for garnish. Chop a few basil leaves coarsely if you prefer more herbaceous texture in the drink. Keep herbs chilled until assembly.

    Measure out 6 tablespoons of the prepared shrub per 8-ounce serving and set aside any additional shrub chilled for future drinks.

Assembly & Service

    Fill an 8–10 ounce serving glass with ice (about 1/2–3/4 full). Add 6 tablespoons (about 1.5 ounces) of the pomegranate–huckleberry shrub to the glass.

    Add 6–8 crushed mint leaves, 2 torn basil leaves, and 1 small thyme sprig into the glass. Give the mixture a gentle stir (4–6 strokes) to lift oils from the herbs without over-muddling; the goal is aromatic freshness, not green puree.

    Top with 6–8 ounces chilled club soda or sparkling water. Stir once gently to combine. Taste and adjust: add an extra tablespoon shrub for more fruit-vinegar intensity or a splash more soda to lighten.

    Garnish with 1–2 teaspoons pomegranate seeds, a small basil leaf, a sprig of thyme, and a mint leaf. Serve immediately with a straw or cocktail pick.
