Method

Prepare oysters

    Clean and chill

    Rinse the oysters under cold running water, scrubbing any dirt or barnacles with a stiff brush. Discard any shells that are open and do not close when tapped. Place the cleaned oysters on ice or in the refrigerator while you prepare sauces.

    Shuck oysters

    Wrap one oyster in the kitchen towel to hold it securely, cupped side down. Insert the tip of the oyster knife at the hinge and twist gently until the shell pops open. Slide the knife along the top shell to sever the adductor muscle, remove and discard the top shell. Run the knife under the oyster to free it from the bottom shell while keeping the oyster level to preserve its liquor. Transfer each shucked oyster on the half shell to a bed of crushed ice to keep cold.

    Cut the lemon in half and reserve one half for serving wedges. Juice the other half if you prefer a bit of lemon juice over the oysters; alternatively serve lemon wedges alongside.

Make mignonette sauce

    In a small bowl combine the red wine vinegar, minced shallot, coarsely ground black pepper, and fine sea salt. Stir to dissolve the salt. Taste and adjust: add a little more vinegar for brightness or a pinch more salt if needed. Stir in the chopped parsley if using. Refrigerate until ready to serve so flavors meld (at least 10 minutes).

Optional hot butter

    If you want a warm-spiced option, melt the unsalted butter in a small saucepan or microwave until fully liquid. Stir in the hot sauce and keep warm. Spoon a drop onto individual oysters just before serving for a warm, tangy accent.

Serve

    Arrange crushed ice on a large platter or individual plates. Nestle the shucked oyster shells into the ice so they sit level. Place mignonette sauce and hot butter (if using) in small serving bowls. Garnish with lemon wedges. To eat, instruct guests to add a teaspoon of mignonette (or a drop of hot butter), squeeze lemon if desired, and tip the oyster and its liquor into the mouth. Discard shells in a separate bowl.
