Bring ingredients to temperature
Remove the trout from the refrigerator 20–30 minutes before cooking to approach room temperature; pat fillets dry with paper towels.

Season trout
Lightly season both sides of each trout fillet with 3/4 tsp salt and a pinch of freshly ground black pepper (reserve remaining salt and pepper for finishing).

Sauté shallot and garlic
In a medium skillet over medium heat, add 1 tablespoon olive oil. When shimmering, add the minced shallot and cook 1–2 minutes until softened. Add minced garlic and cook 30 seconds until fragrant, taking care not to brown.

Reduce moisture
Cook the spinach down until most liquid evaporates, then transfer to a fine sieve set over a bowl and press gently to remove excess water. Return spinach to the skillet and add 1 tablespoon salted butter; toss briefly and remove from heat.

Finish spinach mixture
Stir in lemon zest, 1 tablespoon lemon juice, 1/4 cup grated Parmesan, 1 tablespoon Dijon mustard, and 1 tablespoon chopped parsley into the warm spinach. Taste and adjust seasoning with up to 1/4 tsp more salt and a few grinds of pepper. Set aside to cool slightly.

Make vermouth butter
In a small saucepan over medium heat, add 3 tablespoons dry vermouth and bring to a gentle simmer until reduced by about half (2–3 minutes). Reduce heat to low and whisk in the 6 tablespoons cold cubed unsalted butter a piece at a time until the mixture emulsifies into a smooth, glossy vermouth butter. Remove from heat and keep warm.

Prepare breadcrumb topping
In a small bowl, combine 1/2 cup panko breadcrumbs, 1/4 cup grated Parmesan (reserve remaining Parmesan for spinach if desired), 1 tablespoon chopped parsley, and a pinch of salt and pepper. Stir in 1 tablespoon melted butter from the vermouth butter (or use the reserved extra butter) to moisten. Fold the breadcrumb mixture into the cooled spinach mixture until evenly distributed — the mixture should hold together but not be soggy.

Preheat oven and sear trout
Preheat oven to 425°F (220°C). Heat a large ovenproof skillet over medium-high heat and add 1 tablespoon olive oil. When oil is hot, place trout fillets skin-side down and sear without moving for 2–3 minutes until the skin is crisp and the edges are opaque about one third of the way up the fillet. Carefully flip fillets skin-side up and cook 20–30 seconds on the flesh side.

Top fillets
Turn the fillets skin-side down again or leave skin-side up depending on pan; transfer fillets to a rimmed baking sheet or keep in the ovenproof skillet. Divide the spinach-parmesan-panko topping evenly among the four fillets, pressing lightly to adhere. Spoon 1 tablespoon of warm vermouth butter over each topped fillet, then place the baking sheet or skillet into the preheated oven.

Bake to finish
Bake for 6–8 minutes, or until the trout reaches an internal temperature of 125–130°F (52–54°C) for medium-rare to medium, and the topping is golden and crisp. If topping needs extra browning, place under broiler 1–2 minutes, watching closely to prevent burning.

Remove trout from oven and let rest 2–3 minutes. Spoon any remaining vermouth butter from the pan over the fillets, add a final grind of black pepper, and brush skin lightly with 1 tablespoon melted butter for sheen if desired.
