Measure and combine
Chill a coupe or martini glass by filling it with ice and cold water; set aside. In a cocktail shaker, add the dry gin, orange liqueur, fresh lemon juice, simple syrup, fresh grapefruit juice, and two dashes of Angostura bitters.

Add ice and shake
Add 4 large ice cubes to the shaker. Seal and shake vigorously for 12–15 seconds until the exterior of the shaker feels very cold and slightly frosted. This both chills and dilutes the mixture properly.

Prepare the serving glass
Dump the ice and water from the chilled glass and briefly swipe the rim with the grapefruit twist to impart aroma.

Double-strain
Using a Hawthorne strainer and a fine mesh (or a julep strainer and a fine sieve), double-strain the shaken cocktail into the chilled coupe, leaving any small ice shards behind to keep the texture silky.

Top with sparkling wine
Gently pour 2 oz of chilled champagne or dry sparkling wine down the side of the glass so it rests on top of the cocktail base, creating a layered effervescence without vigorous mixing.

Garnish and serve
Express the oils of the grapefruit twist over the surface by holding it skin-side down and giving it a quick twist, then drop the twist into the drink as a garnish. Optionally, serve over a few small ice cubes if you prefer a colder, slower-diluting drink. Serve immediately.
