Peel the cucumbers, halve lengthwise and scoop out seeds with a spoon if they are seedy; roughly chop. Peel, core, and chop the Granny Smith apple into pieces about 1 inch. This yields approximately 2 cups cucumber and 1 cup apple when measured packed.
Combine ingredients
In a blender or food processor, add the chopped cucumber, chopped apple, cold water, lime juice, granulated sugar, honey (if using), and a pinch of fine sea salt.
Purée
Blend on high until completely smooth, about 30–60 seconds. Stop and scrape down the sides once to ensure even purée. Taste and adjust sweetness or acidity: add an extra teaspoon sugar or a little more lime juice if needed.
Strain (optional for smoother texture)
For a silkier granita, pour the purée through a fine-mesh sieve into a bowl, using a spatula to press the liquid through and leaving behind the fibrous solids. If you prefer a more rustic texture, skip this step.
Freeze and Flake
Chill mixture
If the purée is warm from blending, chill in the refrigerator for 20–30 minutes until cold. Pour the chilled (or strained) mixture into a shallow metal or glass baking pan — a 9x9-in (or similar shallow) pan works well. The shallower the pan, the faster and more even the freezing.
Scrape periodically
Every 30–45 minutes for the next 2–3 hours, remove the pan and vigorously scrape and rake the mixture with a fork to create fine, feathery flakes. Rotate the pan if some sections are freezing faster. Continue until the whole surface is a light, granular texture (total freeze time about 3–4 hours depending on freezer).
Final firming (optional)
If you prefer a firmer granita, after achieving the flaked texture, press the granita down lightly with the back of a spoon and return to the freezer for 15–30 minutes, then rake once more before serving.
Serve
Spoon the granita into chilled bowls or small glasses. Garnish with a few mint leaves, a cucumber ribbon or slice, and a sprinkle of apple matchsticks or microgreens. Serve immediately for best texture.
