Build the spirit mix
In a cocktail shaker, combine the cognac (0.25 cups), orange curaçao (1 tbs), fresh lemon juice (1 tbs) and simple syrup (1 tsp). Add the Angostura bitters (4 tsp).

Chill and lightly dilute
Add ice (about 1 cup) to the shaker. Seal and shake vigorously for 8–10 seconds to chill and lightly dilute the spirit mixture. Strain the mixture through a fine mesh strainer into a chilled mixing glass or directly into flutes, leaving about 2–3 tbsp worth of space for sparkling wine.

Garnish
Express an orange peel over the top of the glass to release its oils, then rub the peel around the rim and drop it into the flute. If using, add a candied or dehydrated orange slice on the rim. For a dramatic historic nod, very sparingly apply a tiny flake of edible gold leaf to the surface (use tweezers; less is more).

Serve
Serve immediately while sparkling. Advise guests to sip slowly to enjoy the layered citrus, cognac warmth and bitters complexity against the crisp dryness of the Champagne.
