Prepare the fish
Rinse the fish briefly under cold water and pat dry with paper towels. Trim away any remaining connective tissue and cut into uniform 1/2-inch cubes so the fish 'cooks' evenly in the citrus.

Combine with citrus
Place the cubed fish in a nonreactive bowl (glass, ceramic, or stainless steel). Pour the fresh lime juice and lemon juice over the fish, making sure the juice covers the fish completely. Stir in the kosher salt and optional sugar until dissolved.

Cover the bowl and refrigerate. Allow the fish to marinate until opaque and firm to the touch: about 20–30 minutes for 1/2-inch cubes. Stir gently once halfway through to ensure even 'cooking'. Taste one piece to confirm doneness — it should be fully opaque.

While the fish marinates, place the thinly sliced red onion in a small bowl with 2 tablespoons of the lime juice to mellow sharpness. Let sit 10–15 minutes, then drain excess juice.
