Method
Prepare Glass & Chill
Chill glass
Fill a highball or Collins glass with ice and set aside to chill while you build the cocktail.
If preferred, lightly bruise the mint by clapping the sprig between your hands to release aromatics; set aside for garnish.
Mix Cocktail
Discard the ice from the chilled glass. In a cocktail shaker filled halfway with fresh ice combine Napoleon brandy (2 oz), Pimm's (1 oz), fresh lemon juice (1 oz), pink lemonade (3 oz), half-and-half (0.5 oz), simple syrup (0.5 oz), and vanilla extract (1 tsp). The half-and-half adds a silky mouthfeel while the Pimm's and lemonade provide the bright pink character.
Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker feels cold and slightly frosted. This both chills and lightly emulsifies the dairy with the citrus and spirits.
Finish & Serve
Fill the chilled glass with fresh ice (about 1 cup). Strain the shaken mixture into the glass over the ice—use a fine strainer if you prefer a smoother texture.
Garnish with a lemon wheel on the rim and the mint sprig tucked into the drink. Finish by grating a light dusting of freshly grated nutmeg (about 1/4 tsp) over the top to add warm aromatic notes that complement the vanilla and brandy.
Serve immediately with a straw or stirrer so the drinker can mix the cream layer if desired.
