Build & Shake
Prepare shaker
Fit a cocktail shaker or a large mixing tin with its lid. Add the light rum, dark rum, passion fruit syrup, fresh lime juice, orange juice, simple syrup and grenadine into the shaker.
Add ice and shake
Add a large handful of ice (or about 6–8 medium cubes) to the shaker. Secure the lid and shake vigorously for 10–15 seconds, until the shaker is cold to the touch and the ingredients are well combined.
Serve
Fill a tall hurricane glass (about 16–20 oz) with crushed ice. Strain the shaken cocktail over the crushed ice, allowing it to settle. Slowly pour the overproof rum on top as a float if using; it will sit on the surface and create a layered look.
Garnish the drink by skirting an orange wheel on the rim and dropping a maraschino cherry into the glass. Optionally, give a small straw or a swizzle stick for stirring before drinking.
Serve immediately. Sip responsibly.
