Prepare Coffee Base
Brew and chill
Brew 3/4 cup of very strong coffee (or use 1/4 cup espresso plus additional hot coffee) so the flavor remains pronounced after freezing. Allow it to cool slightly (to warm, not hot) for 5–10 minutes.
If you prefer a smoother frozen texture, pour the warm coffee into an ice cube tray and freeze for at least 4 hours or overnight. For faster assembly, proceed with hot coffee and lots of ice/cold blending but expect slightly more dilution.
Assemble Frozen Drink
Combine ingredients in blender
In a high-speed blender add the cooled brewed coffee (or coffee ice cubes if using), dark espresso (if using), 1.5 oz Irish whiskey, 1 oz coffee liqueur, 0.5 oz crème de cacao (if using), and 0.5 oz simple syrup. Add 2 cups of coarse ice cubes (or enough frozen coffee cubes to reach 1–1.25 cups of solids).
Add dairy for creaminess
Pour in 1 oz chilled heavy cream and 1 oz chilled half-and-half (or milk). These give a velvety mouthfeel while still allowing the drink to be slushy.
Blend to slush
Secure the lid and blend on medium-high in short pulses for 10–20 seconds, checking texture. Aim for a thick slushy — smooth but still scoopable. If too thin, add a few more ice cubes or frozen coffee cubes and pulse; if too thick, add a splash (1–2 tbsp) of brewed coffee or half-and-half and pulse again.
Finish & Serve
Taste and adjust sweetness or strength: add up to 1/4 oz more simple syrup for sweetness or 1/4 oz more Irish whiskey for a boozier profile. Pulse briefly to incorporate any additions.
Top with 2 tablespoons of lightly sweetened whipped cream. Grate a little dark chocolate over the cream or dust with 1/2 tsp cocoa powder. Optionally garnish with 1–2 whole coffee beans.
Serve immediately with a short spoon and a straw. Encourage stirring to mix a bit of the whipped cream into the slush for the classic Irish coffee experience.
