Trim & Marinate
Pat frog legs dry with paper towels. If whole legs are large, separate drumette from thigh at the joint. Place frog legs in a shallow bowl or resealable bag. Combine buttermilk, hot sauce, salt, and black pepper; pour over frog legs to fully coat. Marinate in the refrigerator for 1 to 4 hours (minimum 1 hour) to tenderize and flavor.

In a wide shallow dish, whisk together all-purpose flour, cornmeal, paprika, garlic powder, onion powder, cayenne, dried thyme, black pepper, and salt until evenly combined.
Make Egg Wash
In a separate shallow bowl, beat the large egg with 2 tablespoons milk until homogenous. This will help the flour mixture adhere and give a crisp crust.
Coating
Remove frog legs from the marinade, letting excess buttermilk drip off but do not rinse. First dredge each leg in the flour/cornmeal mixture, shaking off excess. Dip into the egg wash, then return to the flour mixture for a final coating, pressing gently so the crust adheres. Place coated legs on a wire rack and let rest for 10–15 minutes to set the coating.
Frying
Heat Oil
Pour 2–3 cups vegetable oil into a heavy skillet or Dutch oven to a depth of about 1 to 1.5 inches (about 1/3–1/2 the height of most skillets). Heat over medium-high until oil reaches 350°F (175°C) on a candy/deep-fry thermometer. If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and brown in about 30–40 seconds.
Fry Legs
Working in batches to avoid crowding (2–4 legs per batch depending on skillet size), carefully add coated frog legs to the hot oil. Fry until golden brown and cooked through, about 3 to 4 minutes per side (6–8 minutes total) for average-sized legs. Internal temperature should read 145°F (63°C) at the thickest part. Adjust heat to maintain 325–350°F so the crust browns without burning.
Drain & Keep Warm
Use a slotted spoon or spider to transfer fried legs to a paper towel-lined plate or a wire rack set over a baking sheet to drain. Keep finished batches in a warm oven (200°F/95°C) while you finish frying remaining legs so they stay crisp.
Finish & Serve
Sprinkle chopped fresh parsley over the fried frog legs and serve immediately with lemon wedges and optional hot sauce. Squeeze lemon over the legs just before eating for brightness. Serve hot for best texture.
