Allow cheeses and cured meats to rest at room temperature for 20–30 minutes before serving so their aromas open and textures soften — this enhances the wine pairing.

On a large wooden board or slate, place the cheeses spaced apart: Manchego, Brie, and Gruyère. Pre-cut a few slices of Manchego and Gruyère and leave Brie whole with a small cheese knife.

Arrange prosciutto and soppressata next to cheeses in loose folds so guests can easily pick pieces.

Fill small bowls or scatter cornichons, marinated mushrooms, and marcona almonds around the board for textural contrast.

Place fresh grapes and fig halves (or small dollops of fig jam) near the cheeses — the ripe fruit complements the wine’s fruit character.

Add small spoons of whole grain mustard and fig jam on the board for optional pairings with meats and cheese.

Fan toasted baguette slices and crackers on one side of the board. Garnish the board with thyme sprigs for aroma and visual appeal.

Heat a large skillet over medium-high heat. Add olive oil and butter until butter foams. Add minced shallot and sauté 1 minute until translucent, then add garlic and cook 30 seconds more.

Cook mushrooms

Add sliced mushrooms in a single layer where possible. Let them cook undisturbed 2–3 minutes to brown, then stir and continue cooking 3–4 minutes until mushrooms release their liquid and it evaporates.

Deglaze the pan with the white wine or a splash of Pinot Noir, scraping up browned bits. Stir in thyme, salt, and pepper. Cook 1–2 minutes until mostly evaporated and mushrooms are glossy and tender. Remove from heat.

Spread a thin layer (about 1–2 teaspoons) of goat cheese or ricotta onto each toasted baguette slice, top with a spoonful of warm mushrooms, and finish with a small thyme leaf as garnish. Arrange on the board immediately so toasty texture contrasts with warm mushrooms.

Place dark chocolate squares on a small plate. Arrange raspberries or spoon small dollops of blackberry compote alongside.

Scatter toasted walnuts over the berries or chocolate for crunch. Serve small portions after the main tasting — the dark chocolate and berries echo the wine’s ripe fruit and subtle spice without overpowering it.
