Prepare the Remoulade Sauce
In a medium bowl, combine the mayonnaise, Dijon mustard, hot sauce, Cajun seasoning, lemon juice, and chopped green onions. Mix until well combined and set aside.
For the Sandwich Assembly

Cook the Andouille Sausage
In a skillet over medium heat, add the andouille sausage links. Cook for about 6-8 minutes, turning occasionally until they are browned and heated through.

Prepare the Bread
While the sausage is cooking, slice the French bread loaves lengthwise without cutting all the way through. Lightly toast the bread if desired.

Slice the Tomatoes
Wash and slice the fresh tomatoes into thin rounds.

Assemble the Po'boy
Spread a generous amount of the spicy remoulade sauce on the inside of each bread loaf. Place the cooked andouille sausage inside, followed by shredded lettuce, sliced tomatoes, spicy pickles, and sliced jalapeños if using.

Serve
Close the sandwich and press down gently. Cut the po'boy in half and serve immediately with extra remoulade on the side.
