Preparing the Potatoes

Soak the Potatoes
If using fresh potatoes, peel and cut them into thin shoestring shapes. Soak in cold water for at least 30 minutes to remove excess starch.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Drain the potatoes and pat them dry with paper towels. Fry them in batches until they are golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt and black pepper.
