Method

Cooking the Rice

    Prepare the Rice

    In a medium saucepan, combine 1 cup of long-grain white rice, 2 cups of water, and 1 tsp of salt. Bring the mixture to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low and cover the saucepan with a lid. Let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed.

    Fluff the Rice

    Remove the saucepan from heat and let it sit covered for an additional 5 minutes. Then fluff the rice with a fork and set aside.

Making the Sauce

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 medium diced onion and sauté for about 5 minutes until translucent.

    Add Garlic and Bell Pepper

    Stir in 3 minced garlic cloves and 1 diced bell pepper. Cook for an additional 3-4 minutes until the bell pepper is tender.

    Combine Remaining Ingredients

    Add 1 can of diced tomatoes (with juices), 1 cup of vegetable broth, 1 tsp of cumin, 1 tsp of paprika, 1 tsp of black pepper, and 1 tsp of chili powder to the skillet. Stir well to combine.

    Simmer the Sauce

    Bring the sauce to a gentle simmer and let it cook for about 10 minutes, allowing the flavors to meld together.

    Finish the Sauce

    Stir in 2 tablespoons of chopped fresh parsley just before removing from heat.

Combining Rice and Sauce
