Method

Preparation

  1. 1

    Prep the Ingredients

Rinse the rice under cold water until the water runs clear. Chop the onion, green bell pepper, and celery into small pieces. Mince the garlic.

Cooking

  1. 2

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.

  2. 3

    Add Garlic and Spices

Stir in the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

  3. 4

    Cook Rice

Add the rinsed rice to the pot, stirring well to coat the grains with the oil and spices. Pour in the chicken broth and bring to a boil.

  4. 5

    Simmer

Once boiling, reduce the heat to low, cover the pot, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

  5. 6

    Add Optional Ingredients

If using, stir in the cooked shrimp and chopped green onions during the last 5 minutes of cooking to heat through.

  6. 7

    Fluff and Serve

Remove the bay leaves, fluff the rice pilaf with a fork, and serve warm.
