Custard

Method

Custard Preparation

1

Make the Custard

In a saucepan, combine milk, heavy cream, granulated sugar, vanilla extract, and salt. Heat over medium heat until warm, stirring occasionally.

2

In a bowl, whisk the eggs. Gradually pour the warm milk mixture into the eggs while whisking to temper them. Strain through a fine-mesh sieve to remove any lumps.

Fried Bread

3

Prepare the Bread

Heat a skillet over medium heat and add butter. Once melted, dip each slice of brioche or challah bread into the custard mixture, coating both sides.

4

Place the soaked bread in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.

Assembly

5

Serve

Place the fried bread on a plate, top with lemon curd, and sprinkle with mixed berries. Dust with powdered sugar before serving.
