Saffron Syrup & Osmanthus Cordial

Make saffron syrup

Place saffron threads in a small heatproof bowl and cover with 2 tablespoons (about 30 ml) hot water. Let bloom for 10 minutes. In a small saucepan combine 1/2 cup water and 1/2 cup granulated sugar. Warm over medium heat, stirring until sugar dissolves. Remove from heat and stir in saffron infusion. Cool. Strain if you prefer a clear syrup. Yield: about 6–8 oz; use 1/4 oz per cocktail.

Make osmanthus cordial

Place 2 tsp dried osmanthus flowers in 1/4 cup hot water and steep 8–10 minutes. Strain to remove solids. Combine the osmanthus infusion with 1/4 cup simple syrup (you can use a 1:1 sugar-to-water portion from above or reserve extra from the saffron syrup). Taste and adjust: the cordial should be floral but not cloying. Chill before use. Yield: ~4 oz; use 1/4 oz per cocktail.

If using egg white: dry shake first. Add 2 oz vodka, 0.75 oz lychee liqueur, 2 oz guava juice, 1 oz coconut water, 0.5 oz lime juice, 0.25 oz saffron syrup, 0.25 oz osmanthus cordial and 1/2 egg white to a cocktail shaker. Dry-shake (no ice) vigorously for 15–20 seconds to emulsify and create foam.

Add ice to the shaker (enough to nearly fill) and shake vigorously again for 12–15 seconds to chill and dilute. If not using egg white: add ice at the start and shake 12–15 seconds.

Double strain into a chilled coupe or Martini glass (or serve over fresh ice in a rocks glass if preferred). Double straining removes small ice shards and osmanthus sediment.

Finish with garnish: float one saffron thread on the foam or surface and place a dehydrated guava slice or peeled fresh lychee on the rim. Sprinkle 2–3 reserved osmanthus flowers over the foam for aroma.

Serve immediately. If foam dissipates, add a few small drops of the saffron syrup on top for visual interest and aroma.
