Mini Crostini
Slice and toast
Preheat oven to 400°F (200°C). Slice the baguette on a slight diagonal into 24 thin slices (about 1/4-inch thick). Arrange slices in a single layer on baking sheets.
Herbed Goat Cheese Spread
In a bowl, combine goat cheese and softened cream cheese. Use a fork or a small spatula to beat until smooth and spreadable.
Stir in minced chives, parsley, lemon zest, black pepper and honey until evenly distributed. Taste and adjust seasoning — add a pinch more salt if desired.
Transfer mixture to a piping bag or a small bowl for easy assembly. Chill briefly if it becomes too soft (15–20 minutes).
Prosciutto-Wrapped Melon Skewers
Cut the cantaloupe or honeydew in half, remove seeds, and slice away rind. Cut flesh into 24 bite-sized cubes or balls using a melon baller.
Smoked Salmon Bites
Top with a folded piece of smoked salmon. Add a few thin slivers of red onion and a caper or small caperberry on top of each. Garnish with a small dill sprig. Arrange chilled on serving tray.
Warm Stuffed Mushroom Caps
Preheat oven to 375°F (190°C). Remove stems from mushrooms and finely chop stems; set caps aside.
In a skillet over medium heat, melt the butter. Add minced garlic and chopped mushroom stems; sauté 2–3 minutes until softened. Add panko breadcrumbs and cook 1–2 minutes to toast lightly.
Fill each mushroom cap generously with the breadcrumb mixture and place on a baking sheet lined with parchment. Bake 12–15 minutes until caps are tender and tops are golden. Serve warm, transferring to a platter with microgreens if desired.
Assembly & Service
Drizzle a light amount of balsamic glaze over the smoked salmon bites or microgreens (optional). Serve passed on trays or arranged on stationary platters. Keep warm items on a heated tray or serve immediately from the oven.
