Make syrup

Combine equal parts honey and hot water (0.5 cup honey + 0.5 cup hot water) in a heatproof container. Stir until fully combined and smooth. Cool to room temperature before using. Store in refrigerator up to 2 weeks.

Combine ingredients

Add 2 oz bourbon, 0.75 oz fresh lemon juice, 0.75 oz honey syrup, and 2 dashes Angostura bitters to a cocktail shaker.

Shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled. This also helps aerate and slightly dilute the drink for balance.

Strain

Double-strain (using a Hawthorne strainer and a fine mesh strainer) into a chilled coupe or rocks glass over one large ice cube, or simply strain into a chilled coupe for a neat serve.

Garnish and serve

Express a lemon twist over the drink (pinch the peel over the surface to release oils) and drop the twist into the glass, or garnish with a lemon wheel on the rim. Serve immediately.
