Prepare ingredients

Juice fresh limes to measure 1 oz (about half a large lime). If using simple syrup, have it chilled and measured. If substituting fine sugar, place sugar in the shaker so it can dissolve when shaken.

Combine in shaker

Add 2 oz white rum, 1 oz fresh lime juice, and 0.75 oz simple syrup to a cocktail shaker. If using egg white for texture, add it now (about half an egg white).

Dry shake (if using egg white)

If you added egg white, shake the ingredients vigorously without ice for 10–15 seconds to emulsify and develop foam.

Add ice and shake

Fill the shaker with ice (about 1 cup). Shake vigorously for 10–15 seconds until the shaker feels very cold to the touch and properly diluted (you should hear a solid, rapid shake sound).

Double strain and serve

Strain the cocktail into a chilled coupe or martini glass using a fine mesh strainer (or the shaker's strainer) to remove ice shards and any egg white foam solids. If you prefer on the rocks, pour over fresh crushed ice instead.

Garnish

Garnish with a lime wheel or twist on the rim. Serve immediately.

Optional variations

Using granulated sugar

If you used 1/2 tsp fine sugar instead of simple syrup, add the sugar to the shaker with the lime juice first and muddle or shake briefly to help it dissolve before adding rum and ice.

Frozen daiquiri

Combine rum, lime juice, simple syrup and 1 to 1 1/2 cups crushed ice in a blender. Blend until smooth and pour into a chilled glass. Garnish with lime.
