Prepare honey syrup

If you don't have honey syrup ready, combine equal parts honey and very hot water and stir until fully combined. Cool to room temperature before using.

Dry shake

Add gin, fresh lemon juice, honey syrup, fresh grapefruit juice, egg white, and orange bitters to the shaker without ice. Secure the lid and shake vigorously for 15–20 seconds. This 'dry shake' emulsifies the egg white and creates a rich foam.

Wet shake

Open the shaker, add the ice (about 1 cup) and shake again vigorously for 10–12 seconds until the shaker is cold to the touch and the mixture is well-chilled.

Double strain

Using both the shaker's strainer and a fine mesh strainer, pour the cocktail into a chilled coupe or flute to remove small ice shards and ensure a smooth, silky texture.

Top with sparkling wine

Gently top the strained cocktail with about 2 oz of dry sparkling wine. Pour slowly so the foam from the egg white rises and forms a clouded cap on the drink (this is the 'clouded' element).

Garnish and serve

Express the oils of a grapefruit twist over the foam and drop it into the drink or place an edible flower on the foam. Serve immediately.

Chill glassware in the freezer for 5–10 minutes before beginning to keep the cocktail colder longer.

If you prefer not to use raw egg white, substitute 0.5 oz aquafaba (chickpea liquid) and increase dry-shake time by a few seconds; results will be similar.
