Method

Cocktail

1

Chill glass

Place a coupe or rocks glass in the freezer for at least 5 minutes or fill it with ice and water to chill while you build the cocktail.

2

Combine ingredients

In a cocktail shaker add 2 oz reposado tequila, 0.75 oz Aperol, 0.75 oz freshly squeezed lime juice, 0.5 oz simple syrup, and 2 dashes orange bitters.

3

Add ice and shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds, until the shaker is cold to the touch and the mixture is well-chilled and slightly diluted.

4

Strain

Discard ice/water from the chilled glass if used. Double-strain the cocktail into the chilled coupe or a rocks glass over fresh ice (or serve neat in the coupe) using a Hawthorne strainer and a fine-mesh strainer to remove small ice shards and pulp.

Garnish

5

Express the orange twist over the top of the cocktail to release oils, then rub it around the rim and drop it into the drink or place it on the rim. Add a lime wheel on the rim or floated on top.
