Preparation
Make the Queso
In a medium saucepan over medium heat, combine the sharp cheddar cheese, monterey jack cheese, cream cheese, and milk. Stir continuously until the cheeses are melted and the mixture is smooth.
Add Flavor
Add the diced jalapeños, garlic powder, onion powder, and salt to the cheese mixture. Stir well and heat for an additional 2-3 minutes until everything is well combined and heated through.
Prepare the Chips
While the queso is cooking, cut the corn tortillas into triangles. Heat the oil in a deep skillet over medium-high heat. Once hot, fry the tortilla triangles in batches until golden brown and crispy, about 2-3 minutes.
Drain and Season
Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt immediately.
Serve
Serve the warm queso in a bowl alongside the freshly made tortilla chips.
