Measure and grind

Measure 1 tablespoon (about 0.0625 cups) of whole coffee beans per 8–12 fl oz cup. Grind beans to a medium grind (similar to granulated sugar) immediately before brewing for best flavor.

Heat water

Heat 12 fl oz (about 355 ml) of fresh cold water to just off boil, about 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let sit 30 seconds.

Bloom (for pour-over / drip)

If using a pour-over cone or drip basket, place ground coffee in filter. Pour just enough hot water to wet grounds (about twice the weight of the coffee) and let sit 30–45 seconds to release CO2.

Brew

Slowly pour the remaining hot water over the grounds in even spirals (pour-over) or start the drip machine. For French press: add grounds to the carafe, pour hot water, stir gently, place lid with plunger up and steep for 4 minutes. For drip/pourover, allow water to pass through grounds into carafe or cup.

Finish

If using a French press, after 4 minutes gently press the plunger down. If using a drip or pour-over, remove filter and discard grounds. Pour brewed coffee into your cup.

Customize and enjoy

Add milk or creamer to taste (about 2 tablespoons as a starting point) and sweeten with sugar or sweetener if desired (start with 1 teaspoon). Stir, taste, and adjust. Serve hot.
