Method
Grilled Cheese Sandwich
Prepare bread and fillings
Spread softened butter evenly on the outside face of each bread slice. If using mayonnaise for a crispier exterior, spread mayonnaise on the inside face of one or both slices instead of or in addition to butter. On the inside face of one slice, spread the softened cream cheese in a thin layer if using.
Assemble
Place one slice of provolone on the inside of the bread (on top of cream cheese if used). Sprinkle the grated cheddar evenly over the provolone. Distribute the thin jalapeño slices across the cheese layer. Top with the second provolone slice and close the sandwich with the second bread slice, buttered side out.
Cook the sandwich
Heat a nonstick skillet or cast-iron pan over medium-low to medium heat for 1–2 minutes. Place the sandwich in the pan and cook for 3–4 minutes until the bottom is golden brown and the cheese begins to soften. Press gently with a spatula. Flip the sandwich carefully, reduce heat slightly if browning too fast, and cook another 3–4 minutes until the second side is golden and the cheeses are melted. If the cheese hasn't fully melted after browning, cover the skillet with a lid for 30–60 seconds to trap heat and finish melting.
Rest and slice
Remove the sandwich to a cutting board and let rest for 1 minute to let the cheese set slightly. Slice diagonally and season the cut edges with a light crack of fresh black pepper, if desired.
Side - Oven Fries
If using frozen fries, bake according to package directions (typically 20–25 minutes at 220°C / 425°F), tossing halfway through, until crisp and golden. If using fresh potato fries: preheat oven to 220°C (425°F). Toss potato fries with olive oil and kosher salt on a baking sheet in a single layer. Roast 25–30 minutes, flipping once halfway, until golden and crisp. Adjust salt to taste and keep warm until sandwich is ready.
Side - Simple Mixed Greens
While the sandwich cooks, toss mixed greens and halved cherry tomatoes with lemon juice or vinaigrette, a drizzle of olive oil (if not using vinaigrette), and a pinch of salt and pepper. Toss gently and serve immediately so greens remain crisp.
