Make the ranch (can be made ahead)

In a bowl, whisk together mayonnaise, sour cream and buttermilk until smooth. Stir in chives, parsley and dill, then add minced garlic, onion powder, lemon juice, salt and black pepper. Taste and adjust seasoning or thinning with a little more buttermilk if you prefer a looser consistency. Chill in refrigerator at least 20 minutes while you prepare the pickles so flavors meld.

Prepare pickles

Drain the jarred dill pickle chips in a colander and pat them dry with paper towels. Remove excess brine — too much liquid prevents a crisp batter. If chips are very large, halve them for easier eating. Place dried chips in a single layer on a paper towel-lined tray.

Set up dredge and batter

In a shallow bowl combine 1 cup flour, cornstarch, cornmeal (if using), baking powder, salt, black pepper, garlic powder and paprika; whisk to blend. In a separate bowl whisk the egg with the cold club soda (or beer) until combined. The batter should be pourable but slightly thick; if it's very thick, add 1–2 tablespoons more cold liquid.

Optional dredge for extra adhesion

Place 1/2 cup flour in a shallow dish and panko in another (if using). Lightly dust each pickle chip with flour before dipping into batter, then, if desired, press into panko for extra crunch. The flour step helps the batter cling and reduces slipping.

Heat oil

Pour vegetable oil into a heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (approximately 4 cups for a medium pot). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with a batter-dipped wooden spoon: bubbles should form steadily around the spoon.

Fry pickles

Working in small batches (6–8 chips depending on pot size), dip each dusted pickle chip into the batter to coat, allow excess to drip off briefly, and carefully lower into hot oil. Fry until golden brown and crisp, about 2–3 minutes per side. Use a slotted spoon or spider to turn chips if needed. Avoid overcrowding the pot to maintain oil temperature.

Drain and season

Transfer fried pickles to a wire rack set over a baking sheet or to paper towels to drain. Immediately season with a light sprinkle of salt while still hot. Allow any excess oil to drip off for 1–2 minutes.

Serve warm with chilled house ranch. For best texture, serve immediately so the coating stays crisp. Leftovers can be reheated in a 375°F (190°C) oven for 6–8 minutes on a wire rack to re-crisp.
