Chipotle Aioli
In a small bowl combine mayonnaise, minced chipotle pepper, adobo sauce, lime juice, honey, minced garlic, salt, and black pepper. Whisk until smooth and taste; adjust heat with more minced chipotle or adobo sauce if desired. Refrigerate while preparing avocados to let flavors meld.

Prep avocados
Halve the avocados, remove pits, and carefully peel. Slice each half into 6–8 even wedges (about 1/2-inch thick). Keep slices intact and transfer to a plate; sprinkle lightly with a pinch of kosher salt to season.
Set up breading station
Place the flour and cornstarch in a shallow bowl, add 1 tsp kosher salt, 1 tsp black pepper, 1 tsp smoked paprika, and 1 tsp garlic powder; whisk to combine. In a second shallow bowl, beat the eggs with the milk until smooth. In a third shallow bowl, spread the panko breadcrumbs in an even layer.
Coat avocado slices
Working in batches of 6–8 slices, gently dredge each avocado wedge first in the seasoned flour/cornstarch mixture, tapping off excess. Dip into the egg wash, allowing excess to drip off, then press firmly into the panko breadcrumbs to fully coat. For an extra-crispy crust, repeat the egg and panko step once more to double-coat.
Heat oil
Pour about 1 cup of vegetable oil into a large skillet (or enough to reach ~1/3-inch depth) and heat over medium-high heat until it reaches 350°F (175°C) or a droplet of water sizzles immediately on contact. If you don't have a thermometer, test with one coated breadcrumb — it should sizzle and brown in about 30–45 seconds.
Fry slices
Carefully place coated avocado slices into the hot oil in a single layer, being careful not to overcrowd the pan. Fry 2–3 minutes per side, or until deeply golden and crisp. Use a slotted spatula to flip gently. Transfer fried avocado to a wire rack or paper towel–lined plate and immediately season with a light pinch of salt. Repeat with remaining slices, adjusting heat so oil stays at around 325–350°F.
Keep warm
If making multiple batches, keep finished slices warm on a baking sheet in a 200°F (95°C) oven while you finish frying the rest.
To Serve
Arrange fried avocado slices on a serving platter. Spoon or pipe the chipotle aioli alongside or drizzle lightly over the slices. Garnish with chopped cilantro (or parsley) and serve with lime wedges for squeezing. Serve immediately while hot and crispy.
