Prepare asparagus

Rinse asparagus and trim woody ends (about 1 inch) — you should have roughly 12–16 spears per pound. Pat dry thoroughly with paper towels; dry asparagus breads better and fries crisper.

Set up breading station

In a shallow bowl combine flour, cornstarch, 1/2 tsp kosher salt, 1/2 tsp black pepper, garlic powder, onion powder, and smoked paprika. In a second bowl whisk eggs with milk until uniform. In a third bowl place breadcrumbs.

Bread the asparagus

Working in batches, dredge each spear in the seasoned flour (shake off excess), dip into the egg mixture, then press into breadcrumbs to coat evenly. Place breaded spears on a wire rack set over a sheet pan. Let rest 10 minutes to set the coating.

Heat oil

Pour oil into a wide, heavy skillet or Dutch oven to a depth of about 1 inch (roughly 1.5–2 cups depending on vessel). Heat over medium-high until a thermometer reads 350°F (175°C) or a breadcrumb sizzles and browns in 10–15 seconds.

Fry asparagus

Fry breaded asparagus in batches so they don’t crowd the pan — 3–5 spears at a time depending on pan size. Fry 2–3 minutes, turning once, until golden brown and crisp. Use a slotted spatula to transfer to a paper-towel-lined tray to drain. Lightly season with a pinch of salt immediately.

Keep warm

If making ahead, keep fried asparagus on a wire rack in a 200°F (95°C) oven for up to 20 minutes to maintain crispness while you finish sauces and assemble.

Salad Base

In a large bowl toss the spring greens, halved cherry tomatoes, and sliced red onion with the light vinaigrette until lightly coated. Divide greens among serving plates or one large platter forming a bed in the center. Squeeze a little lemon over the greens if desired.

Teriyaki Drizzle

If teriyaki sauce is very thick, warm it gently in a small saucepan over low heat and thin with up to 1 tablespoon water to reach a pourable consistency. Keep warm off heat until plating.

Sriracha Aioli

Whisk together mayonnaise, sriracha, lemon juice, minced garlic, honey (if using), and 1/4 tsp salt in a small bowl. Taste and adjust heat or acidity: add more sriracha to increase heat or more lemon to brighten. Transfer to a squeeze bottle or piping bag for neat drizzling.

Assembly & Garnish

Arrange the fried asparagus on top of the dressed spring mix bed, crossing spears slightly for visual appeal.

Drizzle teriyaki sauce lightly over the asparagus (about 1–2 tablespoons per plate) in a thin zigzag.

Drizzle sriracha aioli over the asparagus and greens in a contrasting pattern. Use a spoon or squeeze bottle to control the amount — roughly 1–2 tablespoons per plate.

Finish with a sprinkle of toasted sesame seeds, sliced scallions, and microgreens/herbs. Serve immediately with lemon wedges alongside.
