Method

Chicken & Marinade

1

Pound and marinate

Pat the chicken breasts dry. If breasts are thick, slice horizontally or place between plastic wrap and pound to an even 1/2–3/4 inch thickness. In a bowl whisk olive oil, lemon juice, garlic powder, onion powder, salt, and black pepper. Add the chicken and coat thoroughly. Marinate at room temperature for 10–15 minutes or refrigerate 30 minutes to 2 hours for more flavor.

2

Cook the chicken

Heat a large skillet over medium-high heat. Add 1 teaspoon olive oil if skillet is dry. When hot, add the chicken breasts and cook 5–6 minutes per side (depending on thickness) until golden and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Remove chicken to a plate and loosely tent with foil.

Bacon & Topping

3

Cook the bacon

While the chicken cooks (or beforehand), cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Transfer bacon to a paper-towel-lined plate to drain, then chop into bite-size pieces.

4

Assemble and melt cheese

Preheat broiler to high (if using broiler) or set oven to 425°F (220°C). Place cooked chicken breasts on a baking sheet or ovenproof skillet. Sprinkle each breast with shredded cheddar cheese, then evenly distribute chopped bacon on top. Broil 1–3 minutes or bake 3–5 minutes until cheese is melted and bubbly—watch closely to avoid burning. Remove from heat.

Ranch Sauce

5

Make the ranch

In a medium bowl whisk together mayonnaise, buttermilk, sour cream, dried dill, dried parsley, dried onion flakes, minced garlic, salt, and black pepper until smooth. Taste and adjust seasoning or consistency (add more buttermilk if you want thinner). Keep chilled until ready to serve.

6

Finish

Drizzle or spoon ranch sauce over each cheesy bacon-topped chicken breast. Garnish with chopped chives.

Optional Serving

7

Serve the Chicken Bacon Ranch on a bed of mixed greens for a low-carb meal or place each breast on a toasted burger bun with tomato slices for a sandwich. Provide extra ranch on the side for dipping.
