Prep
If the pork rinds are very large, break them into snack-sized pieces (about 1.5–2 inches). Place all pork rinds in a large mixing bowl. Set aside.
Cajun Seasoning
Make the seasoning
In a small bowl, combine smoked paprika, sweet paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, and kosher salt. Whisk or stir until evenly mixed.
Taste-adjust
Taste a tiny pinch of the seasoning and adjust cayenne or salt to your heat/salt preference. Remember the pork rinds are salty; start conservative with cayenne.
Coating & Finish
Lightly oil
Drizzle about 1 tablespoon neutral oil over the pork rinds. Toss gently with clean hands or tongs so the oil forms a very light coating—this helps the seasoning adhere without making rinds soggy.
Season
Sprinkle the prepared Cajun seasoning over the oiled pork rinds in 2 additions, tossing gently after each addition to distribute evenly. Continue until seasoning is evenly coated and no large clumps remain.
Rest for adhesion
Let the seasoned pork rinds sit in the bowl for 5 minutes so flavors meld and seasoning adheres.
Optional crisp-up (oven)
If your pork rinds are slightly stale or you prefer an extra-crispy finish, preheat oven to 350°F (175°C). Spread seasoned rinds in a single layer on a rimmed baking sheet and bake 3–5 minutes, watching closely to avoid burning. Remove and let cool 2 minutes.
Finish and serve
Transfer the Cajun pork rinds to a serving bowl. Squeeze a lemon wedge lightly over them if using and sprinkle chopped parsley for color. Serve immediately while crisp.
