Whipped Country Butter

Soften butter
Leave the unsalted butter at room temperature for 30–45 minutes until very soft but not melted. If short on time, cut butter into 1/2-inch cubes to accelerate softening.

Combine ingredients
Place the softened butter in the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl if using an electric hand mixer. Add the heavy cream.

Season and fold
Add the fleur de sel, chopped chives, thyme, black pepper, and lemon zest (if using). Mix on low speed for 15–30 seconds just to distribute the herbs and salt evenly. Taste and adjust salt or pepper to preference.

Chill briefly
Transfer the whipped butter to a small serving bowl or pipe into a ramekin. Refrigerate 10–15 minutes to firm slightly so it holds shape on the bread, or serve immediately if you prefer a softer spread.

Toast (optional)
For warm, crisp toast: preheat a skillet over medium heat or oven broiler. If using skillet, toast slices 1–2 minutes per side until golden. If using broiler, place slices on a baking sheet and broil 1–2 minutes per side, watching closely to avoid burning.
