Cocktail

Method

Cocktail

  1. 1

    Prepare fresh juices and pulp

Juice the blood orange, lime, and yuzu (if using fresh yuzu). If using bottled yuzu, measure 0.25 oz. Cut and scoop fresh passionfruit to yield 1 oz of pulp (include seeds if you like texture).

  2. 2

    Dry shake

If using egg white: add gin, passionfruit pulp, blood orange juice, lime juice, yuzu juice, simple syrup, and egg white to a cocktail shaker. Dry shake (no ice) vigorously for 15–20 seconds to emulsify and build froth.

  3. 3

    Wet shake

Add a large handful of ice to the shaker. Shake vigorously for 12–15 seconds until well chilled and the outside of the shaker becomes frosty.

  4. 4

    Strain

Double strain the cocktail into a chilled coupe or Nick & Nora glass (use a fine mesh strainer to catch passionfruit seeds if you want a smooth drink). If you prefer more texture, single strain to keep some seeds.

  5. 5

    Bitters finish (optional)

If using bitters, add 1 dash on the foam and gently swirl with a toothpick to create a small pattern.

Garnish & Serve

  1. 6

Float a thin blood orange wheel or twist on the foam. Spoon 1 tsp of passionfruit seeds or a half passionfruit shell with seeds onto the surface or alongside the garnish for aroma and visual impact.

  2. 7

Serve immediately while chilled. Recommend pairing with light appetizers or as a bright aperitif.
