Syrups & Bitter

Garnish & Finish

Method

Syrups & Bitter

  1. 1

Make simple syrup (if not using pre-made)

Combine 0.5 cups cane sugar and 0.5 cups water in a small saucepan. Warm gently over low heat, stirring until sugar fully dissolves. Remove from heat and cool to room temperature. Store in refrigerator if not using immediately.

  2. 2

Measure out 2 dashes of aromatic bitters and set aside.

Build the Knot – Groni

  1. 3

Chill a rocks glass by filling with ice and setting aside while you mix.

  2. 4

In a mixing glass filled with ice, combine 1.25 oz gin, 0.75 oz sweet vermouth, and 0.75 oz Campari (or the second 0.75 oz Italian bitter liqueur if you prefer to list separately).

  3. 5

Add 2 dashes of aromatic bitters to the mixing glass.

  4. 6

Stir the mixture briskly for 20–30 seconds until well-chilled and properly diluted (glass should frost slightly).

  5. 7

Discard the ice from the chilled rocks glass and place a single large ice cube into the glass.

  6. 8

Strain the mixed cocktail over the large ice cube into the rocks glass.

  7. 9

Express the orange peel over the drink by holding it skin-side down about 2–3 inches above the glass and giving it a firm twist to release the oils. Rub the peel around the rim, then drop it into the glass as garnish.
