Clean and inspect
Rinse mussels under cold running water. Discard any with cracked shells or that do not close when tapped. Pull off beards (fibrous threads) with a firm tug and scrub shells if needed.

Add 1 cup dry white wine to the pan and bring to a simmer, scraping any browned bits from the bottom. Increase heat to medium-high, add the mussels, sprinkle 1 tsp sea salt and 1 tsp freshly ground black pepper, then cover. Steam the mussels until they have opened, about 5–7 minutes. Shake the pan once or twice during cooking to redistribute mussels. Discard any mussels that remain closed.

Reduce heat to medium. Pour the cooking liquid through a fine-mesh sieve into a clean saucepan or back into the pot to remove grit and small shell fragments. Return the strained liquid to medium heat.

Add 1 cup heavy cream to the strained cooking liquid and bring to a gentle simmer, stirring. Allow the cream to reduce slightly for 2–3 minutes so the sauce thickens and flavors concentrate.

Stir in 1 tablespoon crème fraîche and 1 tablespoon grated Parmesan to enrich and slightly thicken the sauce. Add 1 tablespoon fresh lime juice and 1 teaspoon grated lime zest to bring a bright island note.

Season the sauce with 1/2 tsp salt, 1/4 tsp black pepper and optional 1 tsp hot pepper flakes for a subtle heat. Stir in 2 tbs chopped cilantro (or parsley). Taste and adjust seasoning — add a touch more lime juice or salt if needed. Keep the sauce warm, but do not boil vigorously once dairy is added.

Return the reserved mussels to the pan with the sauce and toss gently to coat and warm through for 1 minute. Spoon sauce over mussels.

Meanwhile, prepare the French bread: preheat broiler (or a grill pan). Lightly butter baguette slices on both sides. Arrange on a baking sheet and broil 1–2 minutes per side until golden and crisp (watch carefully to avoid burning). Alternatively, grill slices until char marks appear and bread is toasted.

Divide mussels and island crème between 4 shallow bowls (serves 4). Spoon plenty of sauce over the mussels. Garnish with extra chopped cilantro and a sprinkle of lime zest if desired. Serve immediately with the toasted French bread and lime wedges for squeezing.
