Wash and chop the stone fruit into small pieces. Peel and finely grate the fresh ginger.

Prepare the Ingredients

In a large pot, combine the water, chopped stone fruit, honey, and grated ginger. Bring to a simmer over medium heat.

Create the Wine Base

Let the mixture simmer for about 10 minutes, allowing the flavors of the fruit and ginger to infuse into the water.

Infuse the Flavors

Remove from heat and let the mixture cool. Once cooled, strain the liquid to separate it from the solid ingredients.

Cool and Strain

Transfer the strained liquid to a fermentation vessel. Add crushed Pinot Gris grapes to the liquid and stir gently. Cover with a cloth and let it ferment at room temperature for about 1-2 weeks.

Fermentation

Once fermentation is complete, siphon the wine into bottles, leaving some space at the top. Seal with corks.
