Preparation Instructions
Prepare the Tartare
Dice the Ahi Tuna and Yellow Tail into small cubes and place them in a mixing bowl.
Add Citrus
Segment the winter citrus and chop it into small pieces. Add to the fish mixture.
Make the Vinaigrette
In a separate bowl, whisk together olive oil, lemon juice, fish sauce, honey, and chopped herbs until well combined.
Combine the Mixture
Pour the vinaigrette over the fish and citrus mixture. Gently toss to coat everything evenly. Allow to marinate in the refrigerator for about 15 minutes.
Prepare Daikon and Crispy Potatoes
Julienne the daikon radish and set aside. Prepare the crispy potatoes by frying or baking until golden and crispy.
Assemble the Dish
On a plate, layer the tartare mixture, top with julienned daikon, and sprinkle with tobiko. Serve with crispy potatoes on the side.
