Preheat your oven to 375°F (190°C).

Trim the asparagus and cut them into 2-inch pieces. Blanch the asparagus in boiling salted water for 2-3 minutes, then immediately transfer them to an ice bath to stop the cooking process.

In a skillet, heat the olive oil over medium heat. Add the young onions and sauté until they are crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

In a mixing bowl, whisk together the farm eggs, heavy cream, salt, and black pepper until well combined.

In a greased baking dish, arrange the blanched asparagus evenly. Pour the egg and cream mixture over the asparagus, then sprinkle the grated Gruyère cheese on top.

Scatter the crispy young onions over the cheese layer.

Bake in the preheated oven for about 25-30 minutes, or until the top is golden and set.
