Prepare Quail

Marinate the Quail

In a bowl, combine chili powder, brown sugar, soy sauce, olive oil, salt, and black pepper. Coat the quail in the marinade and let it sit for at least 30 minutes.

Cook the Quail

Preheat the grill or oven to medium-high heat. Grill or roast the quail for about 20 minutes, turning occasionally, until cooked through and caramelized.

Prepare Green Papaya Salad

Shred and Mix

Peel and shred the green papaya using a grater or food processor. In a bowl, mix the shredded papaya with fresh cilantro, crushed red chilies, and lime juice.

Make Mango Vinaigrette

Blend Vinaigrette Ingredients

In a blender, combine ripe mango, olive oil, apple cider vinegar, honey, and salt. Blend until smooth and creamy.

Prepare Green Tomato Chutney

Cook Chutney

Chop green tomatoes and onion. In a saucepan, combine chopped green tomatoes, onion, sugar, apple cider vinegar, and salt. Cook over medium heat for about 15 minutes until thickened.

Serve

Plate and Enjoy

On a plate, arrange the grilled quail with the green papaya salad on the side. Drizzle with mango vinaigrette and serve with green tomato chutney.
