Curing the Halibut

Prepare the Marinade

In a bowl, combine the green tea leaves, sea salt, sugar, grated ginger, and dried hibiscus flowers. Mix well.

Cure the Halibut

Place the halibut fillet in a shallow dish and cover it evenly with the marinade mixture. Ensure the fish is well coated. Cover the dish with plastic wrap and refrigerate for 4-6 hours.

Rinse and Pat Dry

After curing, remove the halibut from the marinade, rinse under cold water, and pat dry with paper towels.
