Blueberry Walnut Baklava, Bavarian Cream, Candied Walnuts, and Caramelized Honey Ice Cream. Chef’s Notes: We begin by layering the phyllo dough down with melted butter then adding toasted walnuts from Tosso Farms tossed with a mixture of water, honey, and sugar. We do three layers of phyllo and two of walnuts, and we bake it all with the weight of a sheet tray over the top. After removing from the oven we coat it with the honey, sugar, water mix, and let it rest overnight. We are topping it all with a vanilla Bavarian cream, macerated local Glick Farms blueberries, and baked phyllo pieces. Served with a blueberry syrup, candied walnuts, and a caramelized honey ice cream. All our honey is locally sourced from Lienert’s. A seasonally sweet finish to your evening!

Phyllo Dough Preparation

Layering Phyllo Dough

Preheat the oven to 350°F (175°C). Melt the butter and brush a 9x13 inch baking dish. Layer 3 sheets of phyllo dough, brushing each layer with melted butter. Mix the walnuts, honey, sugar, and water in a bowl, then spread half over the phyllo. Repeat with another 3 layers of phyllo followed by the remaining walnuts. Top with 3 more layers of phyllo, brushing with butter.

Baking

Place a sheet tray over the top to weigh it down and bake for 30-35 minutes until golden brown. Allow to cool.

Honey Soak

While baking, combine the remaining honey, sugar, and water in a saucepan and bring to a simmer. Once the baklava is out of the oven, pour the honey mixture over it and let it sit overnight.

Bavarian Cream

Preparing Gelatin

Sprinkle gelatin over the cold water and let it bloom for about 5 minutes. In a saucepan, combine milk, sugar, and vanilla bean (scraped) and bring to a simmer. Whisk in the bloomed gelatin until dissolved.

Whipping Cream

In a separate bowl, whip the heavy cream to soft peaks. Fold the whipped cream into the milk mixture until well combined. Chill until set.

Blueberry Syrup

Making Syrup

In a saucepan, combine blueberries, sugar, and water. Simmer for about 10 minutes until thick and syrupy. Strain and cool.

Candied Walnuts

Candying Walnuts

In a saucepan, combine walnuts, sugar, and water. Cook over medium heat until the sugar melts and coats the walnuts. Spread on parchment paper to cool.

Caramelized Honey Ice Cream

Ice Cream Base

In a saucepan, heat honey until caramelized. Mix cream, milk, and sugar in a bowl. Add the caramelized honey and vanilla extract, then churn in an ice cream maker according to the manufacturer's instructions.
