Preparation and Cooking
Marinate the Poussin
In a bowl, soak the poussin in buttermilk, cover, and refrigerate for at least 4 hours or overnight.
Make the Bourbon Maple Sauce
In a saucepan, combine bourbon and maple syrup. Bring to a boil, then reduce heat and simmer for 10 minutes until slightly thickened. Set aside.
Prepare the Biscuit Dough
In a bowl, mix flour, cornstarch, baking powder, baking soda, salt, black pepper, paprika, and garlic powder. Cut in butter until mixture resembles coarse crumbs. Stir in milk until a dough forms.
Fry the Poussin
Heat olive oil in a large deep skillet over medium-high heat. Remove poussin from the buttermilk, dredge in flour mixture, and fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.
Bake the Biscuits
Preheat the oven to 425°F (220°C). Roll out biscuit dough to 1-inch thickness, cut into rounds, and place on a baking sheet. Bake for 12-15 minutes until golden.
