Prep cabbage and herbs

Quarter and core

Remove any wilted outer leaves from the cabbage. Cut the cabbage into quarters through the core. Trim out the tough core from each quarter and discard.

Slice

Slice each quarter into 1/2‑inch thick wedges (so they hold together for roasting/searing) or into 1/4‑inch thick shreds if you prefer a tossed salad. Keep wedges intact if planning to sear/roast; keep shreds if serving raw or quickly sautéed.

Prepare lime and cilantro

Zest the lime lightly if desired and cut it in half. Roughly chop the cilantro leaves and set aside. Toss cilantro with a small pinch of salt to release aroma if you like.

Make soy‑chili crunch butter

In a small saucepan or skillet over low heat, melt the unsalted butter with the neutral oil. This combination prevents the butter from burning and provides a good mouthfeel.

Add the minced garlic and grated ginger and cook gently for 30–45 seconds, stirring, until fragrant but not browned.

Stir in the soy sauce, rice vinegar, brown sugar (or honey), chili crisp (or oil with chili flakes), and toasted sesame oil. Keep the heat low — you are combining flavors, not reducing. Taste and adjust: add a little more soy for saltiness, more chili for heat, or more sugar if you want sweetness to balance heat.

Remove from heat and fold in the sliced scallion and toasted sesame seeds. Let the mixture sit for 2–3 minutes so flavors meld. If the butter has separated slightly, whisk briefly to emulsify.

Cook cabbage (two options)

Preheat oven to 425°F (220°C). Place cabbage wedges on a rimmed baking sheet, drizzle lightly with oil and sprinkle 1 tsp kosher salt evenly over wedges. Roast for 18–22 minutes, flipping once halfway, until outer leaves are browned and edges are crisp while centers remain tender. Remove from oven and keep warm.

Option B — Pan‑sear wedges

Heat a large heavy skillet (cast iron recommended) over medium‑high heat. Add 1 tbsp neutral oil. When shimmering, add cabbage wedges cut‑side down, press gently with a spatula, and sear without moving for 3–5 minutes until deeply browned. Turn and sear other sides 2–3 minutes until just tender. Season with remaining pinch of salt and remove from pan.

Option C — Quick sauté (for shredded cabbage)

Heat 1 tbsp neutral oil in a large skillet over medium‑high heat. Add shredded cabbage and a pinch of salt and cook, stirring occasionally, 4–6 minutes until wilted and edges begin to caramelize. Finish with a squeeze of lime and transfer to a serving bowl.

Assemble and finish

If using wedges (roasted or seared), place cabbage on a platter. Spoon the warm soy‑chili crunch butter evenly over the hot cabbage so it melts into the layers. If using shredded/sauteed cabbage, toss the cabbage with the soy‑chili butter in the skillet until evenly coated.

Squeeze the fresh lime over the dressed cabbage to taste (start with half a lime). Scatter the chopped cilantro and any remaining scallion slices over the top. If desired, sprinkle an extra pinch of toasted sesame seeds and a light drizzle of chili crisp for more heat and texture.

Serve immediately while warm as a side dish or light main. Leftovers can be refrigerated in an airtight container up to 3 days and reheated gently in a skillet.
