Prepare seafood and veggies
If using live lobster, humanely kill and place in the freezer for 20 minutes before cooking, then rinse. If using whole cooked Dungeness crab or pre-cooked snow crab legs, rinse under cold water and set aside. Wash corn and cut into halves if desired. Rinse potatoes and leave whole.
Build the boil
In a large stockpot (at least 8 qt), add 6 cups water, 3 tablespoons Old Bay seasoning, 2 teaspoons kosher salt, halved garlic cloves, halved lemon, and 2 bay leaves. Bring to a rolling boil over high heat.
Cooking sequence
Add seafood
Add your chosen seafood to the pot: - Lobster (1.5–2 lbs whole): place head-first into boiling water and cook for 8–10 minutes from the return to a boil for 1.5–2 lb lobster. - Dungeness crab (1.5–2 lbs whole, cooked): plunge into boiling water for 4–6 minutes just to heat through and infuse flavor. - Snow crab legs (1.5 lbs, pre-cooked): submerge and simmer for 4–5 minutes until heated through. Adjust time if seafood is raw — raw Dungeness or snow crab legs will need closer to 8–10 minutes. After adding seafood, maintain a gentle boil and time accordingly.
Butter sauce & serve
While the boil cooks or just after removing food, melt 4 tablespoons unsalted butter in a small saucepan over low heat. Stir in 2 tablespoons chopped parsley and 1/2 teaspoon crushed red pepper flakes if using. Keep warm for dipping.
Discard the used boil liquid once cooled, or strain and reserve a cup for thinning butter sauce if desired.
