Make the roux
In a heavy-bottomed Dutch oven or large saucepan over medium heat, combine the vegetable oil and the flour. Whisk constantly for 12–18 minutes until the mixture turns a deep caramel to chocolate color and has a nutty aroma. Lower the heat if the roux threatens to burn; patience and continuous stirring are key.
Once the roux reaches a deep color, immediately add the diced onion, green and red bell peppers, and celery (the 'holy trinity'). Stir constantly to coat the vegetables in the roux and cook until the vegetables soften, about 6–8 minutes. Season with 1 tsp of the kosher salt and 1/2 tsp black pepper while the vegetables cook.
Proteins & vegetables
Add the sliced sausages to the pot. Sauté with the roux-coated vegetables for 4–5 minutes until the sausages begin to brown and release flavor.
Stir in the minced garlic and cook 30–45 seconds until fragrant. Add the diced tomatoes with their juices, stirring to deglaze the bottom of the pot and incorporate any browned bits.
Pour in the chicken stock slowly while stirring to combine with the roux and vegetables. Scrape any browned fond from the bottom. Add the bay leaf, thyme, Worcestershire sauce, remaining 1/2 tsp kosher salt (adjust later), and the cayenne or smoked paprika depending on desired heat. Bring the mixture to a gentle simmer.
Add the okra and corn. Simmer uncovered over low to medium-low heat for 20–25 minutes to meld flavors and thicken the gumbo. Taste and adjust seasoning with remaining black pepper and more salt or hot sauce if desired.
Five minutes before serving, add the peeled and deveined shrimp to the pot. Simmer gently until the shrimp are opaque and cooked through, about 3–5 minutes (do not overcook). Discard the bay leaf.
Aromatics, seasoning & finishing
If using file powder, sprinkle it into the gumbo off heat (or with the pot very low) and stir to incorporate; this will add a slightly thickened texture and an earthy flavor. Adjust cayenne or smoked paprika to finalize mild or spicy profile, and add a few dashes of hot sauce if you want extra heat.
Stir in half the chopped scallions and the parsley, reserving the rest for garnish. Let the gumbo rest 3–5 minutes off heat so flavors settle.
